How-To Turn Ordinary Meals into Extraordinary with Chef Barb Jordan

Chef Barbara Jordan of Reser’s Fine Foods, is a classically trained chef and believes that simple foods can be great, “If you just love-them-up a little!” A graduate of the prestigious Culinary Institute of America (CIA), she also gained real-life lessons from her mom who taught her, “Attention to detail is the difference between an ordinary meal and an extraordinary meal.” As the director of culinary development at Reser’s (the largest salad manufacturer in the US), Chef Barb specializes in helping busy families put homestyle favorites on the table–fast. She’s currently working on a collection of quick-fix recipes for prepared salads, side dishes and entrees.

Curried Chicken Pita Wrap

1 cup Reser’s Chicken Salad
2 tsp Curry Powder
1/2 tsp Turmeric
1/2 tsp Cumin
1/2 tsp grated ginger
2 tbsp sweetened dried cranberries
2 tbsp cashews
Sliced Cucumber
Fresh Cilantro
Mix Reser’s Chicken Salad with spices and fresh grated ginger. Add cashews and dried cranberries to the chicken. Arrange cucumber slices and fresh cilantro inside pita and fill with chicken. Serve with a yogurt and cucumber sauce for an extra Mediterranean touch.

2-4 servings

Linguini with Shrimp and Spinach

1 16 oz. box of linguini, cooked
1 lb. 26-30 CT. shrimp, peeled and de veined
2 cups Stonemill Kitchens Spinach Artichoke Parmesan Dip
2 cups heavy cream
1 tsp. salt
½ tsp. black pepper
¼ cup olive oil
In a bowl combine dip, heavy cream, salt and pepper. Set aside. Place a 5 qt. Pot over high heat. Add olive oil and shrimp. Cook stirring constantly for approx. 3-5 min. Add cooked linguini and mixture of dip, heavy cream, salt and pepper to pot. Cook stirring frequently until hot. Serve immediately.
