Potato Chip Bread

 Ingredients:

2 c. all-purpose flour
2-1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. garlic powder
1/4 c. sugar
1 c. finely crushed potato chips
1 beaten egg
1 c. milk
2 Tbsp. oil

Method:
Turn oven to 350 degrees.
Grease the loaf pan (or spray with a vegetable cooking oil)
Combine all dry ingredients in a medium-size bowl.
Combine liquids in a smaller bowl.
Stir liquids into dry ingredients to make a soft dough.
Empty the dough into the greased loaf pan an dbake for 55 minutes.

Big and Beautiful Blueberry Muffins

Blueberry Muffins

Ingredients:

1-3/4 c. all-purpose flour
1/4 c. sugar
1 Tbsp. baking powder
1 tsp. cinnamon
3/4 teas. salt
1 egg
1 c. milk
1/4 c. melted magarine
1 c. blueberries – fresh or frozen

Method:

  1. Turn oven to 425 degrees. Grease the muffin tins well, or spray with a vegetable cooking oil.
  2. Sift together the floor, sugar, baking powder, cinnamon, and salt into a large bowl.
  3. In a smaller bowl, beat the egg, milk, and melted margarine together with a wooden spoon, then stir lightly into dry ingredients.
  4. Gently fold in the berries. (never overmix muffins)
  5. Fill the well-greased muffin tins 3/4 full.
  6. Bake at 425 degrees for 20 minutes.

Zucchini Pineapple Bread

 Ingredients:

3 eggs
1 c. oil
2 c. sugar
3 c. flour
3 tsp. vanilla
1 tsp. baking powder
1 tsp.baking soda
1 tsp. salt
1/2 c. raisins
3 tsp. cinnamon
1 c. chopped walnuts
1 (8 oz.) can crushed pineapple, drained
2 c. grated zucchini

Method:

Beat eggs until fluffy and add oil, sugar, vanilla and zucchini. Mix well. Add dry ingredients and mix well. Add raisins, pineapple and nuts. Blend. Bake in greased and floured Bundt pan at 325 degrees for 1 hour and 20 minutes or 2 greased and floured bread pans for 1 hour.

Beer Cookies

Beer

 Ingredients:

4 egg yolks
1/2 tsp, salt
1/2 (6 oz.) bottle beer
3 c. flour (or as needed for dough)

Method:

Put flour and salt on board. Add beaten egg yolks. With fork, stir in the beer. Roll out the dough, cut into small squares and put a slit in the center. Then put one corner in the slit. Fry in deep fat until brown. Drain on paper towel and sprinkle with powdered sugar.

Raisin Bread Pudding

Pumpkin Raisin-Bread Pudding

 

Ingredients:

6 large eggs, beaten
1/2 c. sugar
4 c. milk
2 tsp. vanilla
1/2 tsp. salt
5 c. bread pieces
1-1/2 c. raisins
2 Tbsp. cinnamon

Method:

Put bread pieces in large bowl. Mix milk and eggs together, then add sugar, salt and vanilla. When mixed together pour over bread pieces and let stand 5 minutes. Pour into a casserole; add raisins and then sprinkle more cinnamon over top. Bake at 375 degrees for 45 minutes or until center is done.

Jamaican Bird Cake

Pineapples & Bananas

 Ingredients:

3 c. sifted flour
1 tsp. baking soda
1 tsp. cinnamon
2 c. sugar
1 tsp. salt
1-1/2 c. cooking oil
1 (8 oz.) can crushed pineapple with juice
1-1/2 tsp. vanilla or rum
2 c. diced bananas

Method:

Measure dry ingredients together and sift. Dice bananas and add to dry ingredients along with oil, vanilla, eggs, pineapple and juice. Stir mixture to blend (do not beat). Pour into a 9-inch greased and floured angel food pan and bake in a preheated oven (325 degrees) for 1 hour and 15 minutes. Set aside to cool, do not remove from pan until cool. You may add chopped nuts and coconut to batter. This is a moist cake.

Butterscotch Cheesecake Bars

graham cracker crumbs

1 (12 oz.) pkg. butterscotch morsels
1/3 c. margarine
2 c. graham cracker crumbs
1 c. chopped nuts
1 (8 oz.) pkg. cream cheese
1 (14 oz.) can Eagle Brand sweetened condensed milk
1 tsp. vanilla extract
1 egg

Method:

Preheat oven to 350 degrees (325 degrees for glass dish). In medium saucepan, melt morsels and margarine; stir in crumbs and nuts. Press half the mixture into bottom of greased 13 x 9-inch baking pan. In large mixing bowl, beat cheese until fluffy; beat in milk, vanilla and egg. Mix well. Pour into prepared pan; top with remaining crumb mixture. Bake 25 to 30 minutes or until toothpick inserted near center comes out clean. Chill before cutting into bars.

Ingredients:

3 c. sugar
3-1/2 c. flour
1-1/2 tsp. salt
1 c. oil
2 tsp. baking soda
1 tsp. nutmeg
1 tsp. cinnamon
4 eggs
2/3 c. water
2 c. pumpkin

Method:

Put all ingredients in large mixing bowl. Mix well. Pour into 2 bread pans and bake one hour and 15 minutes in a 350 degree oven.

Sky-High Biscuits

Baking Powder Biscuits Served Shortcake-style

Ingredients:

2 c. all-purpose flour
1 c. whole wheat flour
4-1/2 tsp. baking powder
2 Tbsp. sugar
1/2 tsp. salt
3/4 tsp. cream of tartar
3/4 c. butter or margarine
1 egg, beaten
1 c. milk

Method:

In bowl, combine the flours, baking powder, sugar, salt and cream of tartar. Cut in buter until mixture resembles coarse cornmeal. Add egg and milk, stirring quickly and briefly. Knead lightly on floured board. Roll or pat gently in to 1-inch thickness. Cut into 1 to 2 inch biscuits. Place in greased 10-inch iron skillet or on a 9-inch square pan. Bake at 450 degrees for 12-15 minutes.

 Ingredients:

3 eggs
1-3/4 c. sugar
1 c. oil
2 c. flour
1/2 tsp. salt
1 tsp. baking soda
1/2 tsp. cinnamon
2 c. sliced apples
1 c. nuts, chopped

Method:

Beat eggs, sugar and oil. Sift together flour, salt, soda and cinnamon. Add this to egg mixture, then beat with mixer. Fold in apples and nuts; beat again on low speed. Pour into greased and floured sheet pan. Bake 40 to 45 minutes at 350 degrees. Sprinkle with powdered sugar.
